- 11/16 cup brown sugar
- 2 tablespoons water
- 7/8 cup cream
- 2 3/16 tablespoons rennet junket, powder
- 2 1/8 cups milk
- 3 3/8 cups pudding
Directions

1In a large saucepan, place the sugar and water.

2Simmer until the sugar is dissolved and caramelized.

3Heat the cream in the microwave, and carefully pour in the caramel.

4Stir, and let boil a few minutes until very smooth. Set aside.

5Mix the rennet with half the milk. Bring to boil.

6Add toffee sauce, and whisk until mixture boils again.

7Remove from heat for a few seconds, stir, and heat again for a few more minutes until it thickens.

8Divide into individual bowls, refrigerate until pudding solidifies, and is well chilled.
