Ingredients

  • 1 large onion, finely chopped
  • 1 large carrot, grated
  • 1 green pepper, finely chopped
  • 1 1/2 tsp. basil
  • 1/4 c. parsley
  • 1 Tbsp. Dijon mustard
  • 3 Tbsp. tamari or soy sauce
  • 1 lb. tofu, pressed with fork or potato masher
  • 2 eggs
  • 1 c. bread crumbs
  • 3/4 c. walnuts, ground or finely chopped

Directions

    Saute vegetables and basil 10 minutes in water or oil.

    Add rest of ingredients; stir well.

    Form into patties or balls.

    Bake at 375° for about 30 minutes or until golden brown on outside, but moist inside.

    Eat as is or with ketchup, tomato slices, lettuce, pickles, chips and sprouts on whole wheat, rye or pita bread.
