Tofu Feta Pie

- 16 saltine crackers
- 1 large red onion, sliced
- 1 lb firm tofu, crumbled
- 2 tablespoons soy sauce (can use tamari, or ponzu)
- 8 ounces feta cheese
- 14 cup water
- 14 cup apple juice
Directions

1Preheat oven to 350F.

2Grease pie plate.

3Crush 8 of the saltines and spread in bottom of pie plate.

4Saute onion in skillet until soft.

5Spread in pie plate.

6Crumble tofu over onions.

7Sprinkle soy sauce over tofu.

8Stir gently.

9Crumble feta cheese over tofu.

10Pour in water, and stir gently.

11Sprinkle apple juice over top of pie to moisten slightly.

12Bake 30 minutes or until golden.
