Tofu Lasagna

Ingredients

  • 1 pkg. whole wheat lasagna noodles
  • 2 1/2 c. spaghetti sauce
  • 2 c. Mozzarella cheese, grated
  • 1/2 lb. sliced mushrooms
  • 1/4 c. parsley, chopped fine
  • 1 c. tofu, mashed
  • 1/4 c. grated Parmesan cheese
  • 1 to 2 cloves garlic, crushed (to taste)

Directions

    Cook the noodles as directed.

    Wash with cold water; set aside.

    Have sauce, grated cheese, mushrooms and parsley ready for assembly.

    Mix tofu, Parmesan and garlic.

    Line the bottom of an 8 x 8-inch pan with a layer of noodles.

    Sprinkle 1/2 of the tofu mixture, 1/2 of the mushrooms, 1/2 of parsley, 1/2 cup of sauce and some cheese.

    Repeat steps, ending with a layer of noodles. Sprinkle with cheese and top with remaining sauce.

    Bake at 350° for 45 minutes.
