Ingredients
- 1 pkg. whole wheat lasagna noodles
- 2 1/2 c. spaghetti sauce
- 2 c. Mozzarella cheese, grated
- 1/2 lb. sliced mushrooms
- 1/4 c. parsley, chopped fine
- 1 c. tofu, mashed
- 1/4 c. grated Parmesan cheese
- 1 to 2 cloves garlic, crushed (to taste)
Directions

1Cook the noodles as directed.

2Wash with cold water; set aside.

3Have sauce, grated cheese, mushrooms and parsley ready for assembly.

4Mix tofu, Parmesan and garlic.

5Line the bottom of an 8 x 8-inch pan with a layer of noodles.

6Sprinkle 1/2 of the tofu mixture, 1/2 of the mushrooms, 1/2 of parsley, 1/2 cup of sauce and some cheese.

7Repeat steps, ending with a layer of noodles. Sprinkle with cheese and top with remaining sauce.

8Bake at 350° for 45 minutes.
