- 1 tablespoon canola oil
- 1 (14 ounce) package firm tofu, cubed
- 1 tablespoon canola oil
- 1 onion, chopped
- 1 clove garlic, minced (optional)
- 1 green bell pepper, chopped
- 1 (15 ounce) can garbanzo beans, drained
- 1 tomato, chopped
- 2 tablespoons garam masala
- salt and pepper to taste
- 2 cups water
Directions

1Heat 1 tablespoon of canola oil in a large skillet over medium-high heat.

2Add the cubed tofu, and cook until lightly browned on all sides, about 10 minutes; remove from the skillet and set aside.

3Reduce the heat to medium, and pour in the remaining canola oil.

4Stir in the onion, garlic, and green pepper.

5Cook and stir until the onion has softened and turned translucent, about 5 minutes.

6Return the tofu to the skillet along with the garbanzo beans and tomato.

7Season with garam masala, salt, and pepper, and pour in the water.

8Bring to a simmer, and cook for 10 to 15 minutes until thickened to your desired consistency.

9Remove from the stove, and allow to rest for 5 minutes before serving.
