  • 2 eggs
  • 1 cup honey
  • 1/2 cup cooking oil
  • 8 ounces fresh tofu
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 2 teaspoons lemon juice

Directions

    Mix in blender until smooth all above ingredients; transfer to a mixing bowl and add: 1 c. carrot, zucchini or apple, finely chopped 1 c. nuts, chopped

    Grease muffin pans or use paper cups, fill and bake at 325 degrees for 20 to 25 minutes.
