  • 100 grams Firm tofu
  • 35 grams Sugar
  • 1 Egg
  • 1/4 tsp Salt (optional)
  • 1 and 1/2 teaspoon Baking powder
  • 60 grams Cake flour

Directions

    Blend tofu with a hand mixer until soft, then add the remaining ingredients starting from the top of the list, stirring after each addition.

    Fill muffin cups about 4/5 of the way, then bake for 20 minutes at 350F/180C.

    (Adjust the baking time to suit your oven.)

    They're done baking when a skewer inserted comes out clean.
