Tofu Spinach Quiche

- 1 lb. soft tofu, drained
- 3 eggs
- 1 tsp. salt
- 1/2 tsp. nutmeg
- 1/8 tsp. pepper
- 2 small onions, minced
- 1 (10 oz.) pkg. frozen, chopped spinach
- 1 unbaked (9-inch) pie crust
- 1/2 c. sharp Cheddar cheese, grated
Directions

1Preheat oven to 350°.

2Cook spinach in a small amount of water only long enough to thaw; drain well.

3Place eggs, salt, pepper and nutmeg in blender.

4While blender is on, drop tofu in 1/4 pound at a time.

5Blend until smooth.

6Combine tofu-egg mixture with spinach and minced onions in a bowl.

7Mix thoroughly.

8Pour into unbaked pie shell and cover with grated cheese.

9Bake for 30 minutes.
