  • Salsa, Green Tomatillo Uncle Rex
  • 1 1/2 lb tomatillos (10-12) 1/2 cup chopped white onion
  • 1/2 cup cilantro leaves 2 Tbsp ea fresh lime & lemon juice
  • 1/4 teaspoon sugar 1-2 cloves garlic
  • 1+ medium tomato Add Garlic Salt to taste
  • 2 Jalapeno peppers, chopped

    1 Remove papery husks from tomatillos and rinse well. Cut in half and place cut side down on a foil-lined baking sheet. Place under a broiler for about 10-12 minutes to lightly blacken the skin.

    2 Place all in a food processor (or blender) and pulse until all ingredients are chopped and mixed. Stir in one cup corn kernels and one can black beans (rinsed & drained).Cool in refrigerator.
