- 4 cups chicken broth
- 2 tomatoes, chopped
- 1 egg
- a pinches of salt
- 1 scallion, sliced into thin rounds
Directions

1Chop the tomatoes into small chunks.

2Heat a little oil in a soup pan, add tomatoes and cook for a couple minutes.

3Add the chicken broth to the pan and cook until it starts to boil. Let it simmer for a couple minutes.

4Beat the eggs in a bowl. Slowly drop the beaten egg into the soup and stir gently until egg is set. Add salt and scallions, and serve.
