Tomato and Thyme Fish

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 (14 ounce) can chopped tomatoes
  • 1 teaspoon light brown sugar
  • 3 sprigs thyme, leaves stripped
  • 1 tablespoon soy sauce
  • 4 fillets white fish

Directions

    Heat the oil in a frying pan, add the onion then fry for 5-8 mins until just browned.

    Stir in the tomatoes, sugar, thyme and soy.

    Simmer for 5 minutes.

    Put the fish into the sauce.

    Cover and gently cook for 8-10 mins until the fish flakes easily.

    Serve.
