- 1/3 c. chopped onion
- 1/4 c. chopped celery
- 2 Tbsp. brown sugar
- 1 tsp. salt
- 2 bay leaves
- 4 whole cloves
- 1 tsp. Lea & Perrins sauce
- 1/2 tsp. Tabasco
- 2 envelopes (2 Tbsp.) unflavored gelatin
- 3 c. cold tomato juice
- 2 Tbsp. lemon juice
Directions

1Simmer onion, celery, sugar, salt, bay leaves, cloves, Lea & Perrins

2and Tabasco, uncovered, for 5 minutes in 1 cup tomato juice.

3Soften the unflavored gelatin in 1 cup of cold tomato juice.

4Dissolve this in the hot juice mixture.

5Add 1 cup cold tomato juice and lemon juice.

6Chill until firm.

7May add carrots or olives. Serves 8 to 10.
