- 1 package unflavored gelatin
- 1/4 cup cold water
- 2 cups tomato juice
- 1 medium onion, sliced
- 1/2 cup sliced celery
- 1 teaspoon tarragon vinegar
- 3 whole peppercorns
- 2 whole bay leaves
- 1/4 teaspoon salt
- Leal lettuce
- Mayonnaise
- Paprika
Directions

1Soften gelatin in water, and set aside.

2Combine tomato juice and next 6 ingredients in a large saucepan; bring to a boil. Reduce heat, and simmer 10 minutes. Strain tomato juice mixture; add gelatin, stirring until dissolved. Pour into 4 lightly oiled 1/2-cup molds; chill until mixture is firm.

3Unmold on a lettuce-lined serving plate. Garnish with a dollop of mayonnaise; sprinkle with paprika.
