Tomato Basil Bread

  • 7 1/2 cups white bread mix
  • 1 tbsp, plus 2 tsp active dry yeast
  • 1/2 cup sun-dried tomatoes in oil, drained and cut into thin strips
  • 2 tbsp dried basil
  • 1 tbsp all-purpose flour

    In a bowl, combine the bread mix and yeast. Add 2 1/2 cups lukewarm water and knead with the dough hook of a mixer, set to the lowest level, until smooth. Then knead at the highest level for 3 mins. Cover and allow to rest in a warm place for 20 mins.

    On a floured work surface, knead the tomatoes and basil into the dough with your hands. Cut in half and shape one half into a round loaf. Sprinkle with the flour, cover and allow to rest in a warm place for 30 mins. Form the remaining dough into a 2 inch diameter roll and cut into 8 equal slices. Form the slices into 8 buns. Cover and allow to rest in a warm place for 20 mins.

    Preheat the oven to 400°F. Line a baking sheet with parchment. Place the loaf and rolls on the baking sheet. Bake the rolls for 18-20 mins and the loaf for 30-35 mins, removing from the oven when a skewer comes out clean. Allow to cool on a wire rack.
