Tomato Basil Dip

- 6 large tomatoes
- 2 None shallots, finely chopped
- 2 stalks basil, leaves removed and chopped
- 2 tbsp balsamic vinegar
- 2 tbsp tbsp olive oil
Directions

1Score the tomatoes crosswise at each end and place in a bowl. Pour boiling water over the tomatoes, drain and place them in a bowl of cold water. Peel the tomato skins, cut the tomatoes in half and remove the seeds. Finely dice the tomato flesh.

2Mix the tomatoes, chopped shallots, basil, vinegar and olive oil. Season with salt and pepper to taste.
