- 1/2 loaf French bread, sliced thinly
- 3 tbsp olive oil
- 3 tbsp tomato chutney or relish
- 6 None small plum tomatoes, sliced
- None None DRESSING
- 4 tbsp olive oil
- 2 tbsp balsamic vinegar
- 2.5 oz mixed greens, to serve

1Preheat broiler.

2Place crostini on a baking tray and drizzle with olive oil. Broil for 2 mins, until golden and crisp. Flip over and coat with tomato chutney. Arrange tomato slices over top and season. Broil for 2-3 mins, until tomatoes soften and start to caramelize.

3Meanwhile, for the dressing, whisk together olive oil and balsamic vinegar. Season.

4Arrange mixed greens on 4 serving plates. Top each with 2 bruschetta then drizzle with dressing. Serve.
