Tomato Burst Salad

- 1 kg tomatoes
- 14 red onion
- 2 tablespoons red wine vinegar
- 12 teaspoon sugar
- salt and pepper
- 6 tablespoons olive oil (extra virgin olive oil)
- 2 tablespoons basil leaves
- 1 small garlic (* optional)
Directions

1Take 200g of the tomatoes and chop roughly.

2Chop the onion roughly then put in a blender with the garlic, vinegar, oil and tomatoes.

3season with salt and pepper.

4Slice the tomatoes and lay flat on a large flat serving dish.

5Just before serving pour over the tomatoes and scatter with thorn basil leaves.

6Drizzle a little more olive oil on top.
