Tomato Burst Salad

Ingredients

  • 1 kg tomatoes
  • 14 red onion
  • 2 tablespoons red wine vinegar
  • 12 teaspoon sugar
  • salt and pepper
  • 6 tablespoons olive oil (extra virgin olive oil)
  • 2 tablespoons basil leaves
  • 1 small garlic (* optional)

Directions

    Take 200g of the tomatoes and chop roughly.

    Chop the onion roughly then put in a blender with the garlic, vinegar, oil and tomatoes.

    season with salt and pepper.

    Slice the tomatoes and lay flat on a large flat serving dish.
  5. 5
    Just before serving pour over the tomatoes and scatter with thorn basil leaves.

    Drizzle a little more olive oil on top.
