Tomato-Carrot Soup

  • 1 green onion, chopped
  • 1 Tbsp. olive oil
  • 1 clove garlic, finely chopped
  • 1 large carrot, peeled and diced
  • 1 1/4 lb. plum tomatoes, chopped
  • 1 c. chicken broth
  • 1 Tbsp. chopped fresh basil leaves
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1 1/2 c. buttermilk
  • chopped tomatoes
  • shredded carrot (optional)

Directions

    Saute green onion in oil in medium size saucepan over medium heat for 3 minutes. Add garlic.

    Saute 2 minutes.

    Add carrot, plum tomatoes, chicken broth, basil, salt and pepper.

    Bring to boiling. Reduce heat. Simmer, covered, 15 minutes or until carrots are tender.
