Tomato-Carrot Soup

Ingredients
- 1 green onion, chopped
- 1 Tbsp. olive oil
- 1 clove garlic, finely chopped
- 1 large carrot, peeled and diced
- 1 1/4 lb. plum tomatoes, chopped
- 1 c. chicken broth
- 1 Tbsp. chopped fresh basil leaves
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1 1/2 c. buttermilk
- chopped tomatoes
- shredded carrot (optional)
Directions

1Saute green onion in oil in medium size saucepan over medium heat for 3 minutes. Add garlic.

2Saute 2 minutes.

3Add carrot, plum tomatoes, chicken broth, basil, salt and pepper.

4Bring to boiling. Reduce heat. Simmer, covered, 15 minutes or until carrots are tender.
