Ingredients

  • tomatoes, cut in chunks (without peeling)
  • 1 c. onions
  • 7 c. sugar
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1/2 c. salt
  • 1 1/2 qt. vinegar
  • 1 tsp. red pepper or ginger

Directions

    Cook the tomatoes with the onions.

    Run through sieve.

    Use 8 quarts tomatoes.

    Add the remaining ingredients.

    Boil down until thick.

    Leave in kettle until cold.

    Put into bottles; will not have to be sealed.
