  • 10 lb. tomatoes, peeled and chopped
  • 1 c. onions, chopped fine
  • 3 red peppers
  • 1 1/2 c. brown sugar
  • 2 Tbsp. salt
  • 2 tsp. each: cinnamon, cloves, allspice, celery salt and mustard
  • 3 c. vinegar

Directions

    Cook tomatoes, peppers and onions without adding water until soft.

    Press mixture through a sieve.

    Combine pulp, vinegar, sugar, salt and spices tied in a muslin bag and cook rapidly over full gas flame until thick, stirring to prevent burning (about 45 minutes).

    Pour into hot sterilized containers and seal.

    Makes about 3 quarts.
