Tomato Cheddar Soup

- 1 medium onion, sliced
- 3/4 lb. Cheddar cheese
- 1/4 c. butter
- 1/4 c. flour
- 2 c. chicken broth
- 2 c. milk
- 1 can whole tomatoes, drained, seeded and chopped
Directions

1Melt butter in large pot at medium heat.

2Add onions and saute until transparent (5 minutes).

3Stir in flour; stir until smooth.

4Add milk and tomatoes.

5Gradually add chicken broth, stirring until smooth.

6Bring to a boil and simmer 10 minutes, stirring occasionally.

7Cheese can be added now or individually when serving soup.

8Serves 6 to 8.
