- 1 pkg. Rice-A-Roni chicken flavor or other flavor if preferred
- 1 lb. boneless, skinless chicken breasts (4 halves, chopped)
- 1 medium tomato, chopped
- 1 tsp. dried basil
- 1 c. (4 oz.) shredded cheese (any to your liking)
Directions

1In large skillet, saute rice-vermicelli mix as the package directs.

2Stir in 2 cups water, chicken and contents of seasoning packet; bring to boil over high heat.

3Cover; reduce heat to low and simmer for 10 minutes.

4Stir in tomato and basil.

5Cover; simmer for 5 to 10 minutes, or until most of the liquid is absorbed.

6Sprinkle or place cheese on top.

7Serves 4.
