- 8 to 10 plum tomatoes, washed
- Salt, to taste
- 4 cloves garlic
- 1/2 jalapeno or Scotch bonnet pepper
- 2 sprigs cilantro/culantro
- 1/3 cup corn oil
- 1 small sliced onion
Directions

1Insert skewers in tomatoes and lay on open flame or cut in half.

2Lay cut side down on baking sheet and broil.

3Char until skin is blackened and peeling.

4Remove from flame and rest on plate.

5Peel off charred skin.

6Using a fork mash tomatoes, and add salt.

7In a mortar smash garlic, peppers and cilantro.

8Mix with puree tomatoes.

9Heat some of the oil in a saucepan and caramelize onion.

10Add heated oil caramelized onion mixture to tomatoes.
