Ingredients

  • 1 lg. red tomato, finely chopped
  • 1 lg. yellow tomato, finely chopped
  • 1 md. onion, finely chopped
  • 1/2 cucumber, peeled, finely chopped
  • 1 stalk celery, finely chopped
  • 1/4 tsp. black pepper
  • 1/2 tsp. dried basil
  • 2 tbsp. olive oil (or other light oil)
  • 1 tsp. lemon juice
  • 1 dash salt
  • 1 apple, peeled and finely chopped

Directions

    Chop all vegtables into small pieces.

    (Think of salsa sized peices) Mix all of the vegtables, together in a medium sized bowl.

    In a seperate bowl mix together pepper, basil, oil and lemon juice creating a dressing.

    Pour over tomatoes and veggies.

    Mix together with a wooded spoon, ensuring that the dressing coats all of the tomatoes.

    Add in a little bit of salt.

    (Not too much because it will spoil the light taste of the dish) Serve over your favorite meat or bread.
