Tomato Egg Fried Rice

Ingredients
- 2 cup white rice
- 3 tomatoes, deseeded and chopped into cubes
- 3 eggs
- 1/4 tsp sesame oil
- 1/2 tsp salt
- 1/2 tsp ground white pepper
- 1 tbsp soy sauce
- 1 shallot, sliced
- 2 cup frozen vegetables
- 1/4 cup cooking oil
- 1 tsp dark soy sauce (optional)
Directions

1Prepare cooked rice, then set aside and let it cool and dry.

2Rice refrigerated overnight works best.

3Prepare steamed or microwaved frozen vegetables.

4Beat egg, sesame oil, salt and pepper.

5Spread cooking oil evenly to heated fry pan.

6Stir fry shallots till light brown.

7Add rice and stir-fry for about 3 minutes.

8Push rice aside to form a crater, and stir-fry tomatoes in the crater for 1 minute.

9Add vegetables to tomatoes and mix with rice.

10Push rice aside to form a crater again and stir-fry eggs in the crater till soft.

11Mix rice into soft egg mixture evenly and gently.

12Add salt to taste and serve.
