Tomato Fried Spaghetti Squash

Ingredients
- 1 spaghetti squash, cooked and shredded
- 1 Tbsp. olive oil
- 1 onion, chopped
- 1 green pepper, chopped
- 1 clove garlic, chopped
- 1 (6 oz.) can tomato paste
- 1 can water or bouillon
- 2 to 4 eggs
- 1/2 tsp. parsley
- 1/2 tsp. basil
Directions

1Heat oil in a large skillet or wok.

2Saute onion, green pepper and garlic.

3Stir in eggs and scramble/fry until eggs are set. Stir in spaghetti squash.

4Stir in tomato paste, water or bouillon, basil and parsley.

5Simmer a few minutes.

6Serve hot.
