Tomato Fried Spaghetti Squash

Ingredients

  • 1 spaghetti squash, cooked and shredded
  • 1 Tbsp. olive oil
  • 1 onion, chopped
  • 1 green pepper, chopped
  • 1 clove garlic, chopped
  • 1 (6 oz.) can tomato paste
  • 1 can water or bouillon
  • 2 to 4 eggs
  • 1/2 tsp. parsley
  • 1/2 tsp. basil

Directions

    Heat oil in a large skillet or wok.

    Saute onion, green pepper and garlic.

    Stir in eggs and scramble/fry until eggs are set. Stir in spaghetti squash.

    Stir in tomato paste, water or bouillon, basil and parsley.

    Simmer a few minutes.

    Serve hot.
