- 1 c. flour
- 1 tsp. baking powder
- 1 tsp. sugar
- 3/4 tsp. salt
- 2 or 3 basil leaves, snipped
- 28 oz. can tomatoes, drained, seeded and chopped
- 1 Tbsp. onion, minced
- 1 Tbsp. parsley, minced
- 1 egg, beaten
Directions

1Mix together all of the ingredients, but do not overmix.

2Drop by tablespoonfuls into hot fat (3/4-inch of fat at 360°) and fry until golden, turning once.

3Drain on paper towels.

4Will keep warm in oven for 2 hours.

5These are excellent to serve as a side dish or as appetizers.
