Tomato Fritters

Ingredients

  • 1 c. flour
  • 1 tsp. baking powder
  • 1 tsp. sugar
  • 3/4 tsp. salt
  • 2 or 3 basil leaves, snipped
  • 28 oz. can tomatoes, drained, seeded and chopped
  • 1 Tbsp. onion, minced
  • 1 Tbsp. parsley, minced
  • 1 egg, beaten

Directions

    Mix together all of the ingredients, but do not overmix.

    Drop by tablespoonfuls into hot fat (3/4-inch of fat at 360°) and fry until golden, turning once.

    Drain on paper towels.

    Will keep warm in oven for 2 hours.

    These are excellent to serve as a side dish or as appetizers.
