Tomato Genoa Pasta

Ingredients

  • 5 ounces genoa salami, chopped
  • 2 large plum tomatoes, chopped
  • 1 small onion, chopped
  • 2 -3 garlic cloves, minced
  • 14 cup olive oil
  • 12 cup fresh basil
  • 4 ounces frozen spinach, thawed
  • 14-12 teaspoon dried chili
  • 450 g pasta
  • sea salt

Directions

    pour oil into pan and bring up to temperature over med-low heat.

    add tomatoes and saute until soft.
  3. 3
    add remaining ingredients, except spinach.

    once onion is transparent and majority of liquid is evaporated and the spinach heat through and set aside.

    drain pasta and mix with tomato/genoa mixture.

    You can top with Romano or Parmesan Cheese if desired(we used Romano).
