Tomato Genoa Pasta

Ingredients
- 5 ounces genoa salami, chopped
- 2 large plum tomatoes, chopped
- 1 small onion, chopped
- 2 -3 garlic cloves, minced
- 14 cup olive oil
- 12 cup fresh basil
- 4 ounces frozen spinach, thawed
- 14-12 teaspoon dried chili
- 450 g pasta
- sea salt
Directions

1pour oil into pan and bring up to temperature over med-low heat.

2add tomatoes and saute until soft.

3add remaining ingredients, except spinach.

4once onion is transparent and majority of liquid is evaporated and the spinach heat through and set aside.

5drain pasta and mix with tomato/genoa mixture.

6You can top with Romano or Parmesan Cheese if desired(we used Romano).
