Tomato Herb Soup

Ingredients
- 3 medium onions, chopped
- 4 medium tomatoes, chopped
- 1/4 c. extra virgin flavorful olive oil
- 3 cloves minced garlic
- 1 bay leaf
- 1 tsp. dried thyme leaves
- 3/4 tsp. dried marjoram leaves
- 1/4 tsp. black pepper
- 8 c. water
- 8 slices French bread, toasted in oven
- 1/2 grated Parmesan cheese
Directions

1Heat olive oil in large, heavy soup pot over medium heat and saute onions until lightly browned.

2Add tomatoes and cook for 5 minutes more.

3Raise heat to high and add garlic, bay leaf, thyme, marjoram, pepper and water.

4Bring to a boil; reduce heat to medium and cook for 15 minutes.

5Puree soup, 2 cups at a time, in blender.

6Return soup to pot and reheat soup to boil over high heat.

7Place two slices of toasted bread in each serving bowl. Ladle soup over bread and top with cheese.
