Tomato Herb Soup

Ingredients

  • 3 medium onions, chopped
  • 4 medium tomatoes, chopped
  • 1/4 c. extra virgin flavorful olive oil
  • 3 cloves minced garlic
  • 1 bay leaf
  • 1 tsp. dried thyme leaves
  • 3/4 tsp. dried marjoram leaves
  • 1/4 tsp. black pepper
  • 8 c. water
  • 8 slices French bread, toasted in oven
  • 1/2 grated Parmesan cheese

Directions

    Heat olive oil in large, heavy soup pot over medium heat and saute onions until lightly browned.

    Add tomatoes and cook for 5 minutes more.

    Raise heat to high and add garlic, bay leaf, thyme, marjoram, pepper and water.

    Bring to a boil; reduce heat to medium and cook for 15 minutes.

    Puree soup, 2 cups at a time, in blender.

    Return soup to pot and reheat soup to boil over high heat.

    Place two slices of toasted bread in each serving bowl. Ladle soup over bread and top with cheese.
