Tomato Ice Salad

  • 1 Tbsp. gelatin
  • 1/4 c. cold water
  • 1 c. sugar
  • 1 c. water
  • 3 egg whites, stiffly beaten
  • juice of 3 lemons
  • juice of 1 orange
  • 1 (8 oz.) can Spanish style tomato sauce

Directions

    Soften gelatin in 1/4 cup cold water.

    Combine sugar and 1 cup water in saucepan.

    Boil about 5 minutes, until light syrup.

    Add fruit juices, tomato sauce and gelatin to syrup.

    Remove from heat.

    Stir until gelatin is dissolved.

    Pour into tray.

    Freeze until mushy, then whip until light and airy.

    Fold in egg whites. Return to freezer until served.
