  • 2 Tbsp. butter or bacon drippings
  • 2 c. okra, sliced (1/2 lb.)
  • 1 c. corn, cut from cob
  • 1/2 tsp. paprika
  • 2 tsp. brown sugar
  • 1/2 c. finely chopped onion
  • 2 c. peeled or canned tomatoes
  • 1 1/4 tsp. salt
  • 1/4 tsp. curry powder

Directions

    Saute onion in fat until brown.

    Add okra and saute for 5 minutes.

    Add other ingredients until vegetables are tender. Serves 6.
