Tomato Pie

  • 9 inch pie crust
  • 4-5 seeded tomatoes
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 4-5 basil leaves
  • 1/4 cup fresh chives or green onions
  • 1/2 cup mayo
  • 2 cups shredded sharp cheddar cheese or any mixture of shredded cheeses.

    Bake pie crust at 425 until golden brown.

    Let cool.

    Just before serving line pie crust with the tomatoes sliced 1/4-1/2 inch thick

    Sprinkle with salt, pepper basil and chives. Mix mayo and cheeses. Spread mixture over tomatoes being careful to bring it out to the edges.

    Bake at 400 degrees for 30-35 minutes.

    (I mixed the mayo and cheese ahead of time and let it get to room tempurature before spreading. It really takes a little coaxing with your fingers to get it spread!)
