Tomato Pie

Ingredients

  • 2-3 large tomatoes (these can be ripe, unripe, or even green)
  • 1 cup (225 ml) sourcream (regular or light)
  • 1/2 cup (125 ml) mayo (regular or light)
  • 1 cup (225 ml) shredded cheddar cheese
  • fresh or dried basil
  • salt, pepper to taste
  • 1 pie crust (I use Pillsbury)

Directions

    Cook pie crust at 400 degrees (200 C.) for approx.

    10 minutes (or until brown.)

    Slice tomatoes.

    Mix sourcream and mayo together.

    Half of the sliced tomatoes (salted and peppered).

    Mayo/sour cream mix (use only 1/2 of the mixture).

    Sprinkle with basil.

    Sprinkle with half of the cheddar cheese.

    Repeat using the remaining ingredients.

    Bake for 30-35 minutes at 375 degrees (200 C.).
