- 1 lb. prepared tomatoes
- 3/4 lb. sugar
- 3/4 c. water
- 1/4 lemon, thinly sliced
- 1 piece ginger root (optional)
Directions

1Select small, firm, yellow or red tomatoes.

2Wash and drain. If a tomato preserve with skins is desired, dip the tomatoes into boiling water, then into cold water and remove skins.

3Handle carefully.

4Boil lemon 5 minutes in part of water.

5Boil remaining water with sugar for 5 minutes to make a syrup.

6Add tomatoes, ginger root, lemon and liquid in which lemon was cooked.

7Boil until tomatoes are clear and the syrup somewhat thick.

8Remove scum.

9Fill hot, sterilized jars 3/4 full with the preserved fruit. If paraffin is to be used, add enough syrup to fill jar to 1/4 inch of top of jar; otherwise, fill to top.

10Seal, label and store.
