Tomato Pudding

  • 4 slices stale or toasted bread
  • 6 medium tomatoes, peeled or canned tomatoes, drained (reserve juice)
  • Salt and pepper to taste
  • 1 Tbsp. butter
  • 1 Tbsp. sugar
  • Fresh dried parsley (optional)

Directions

    Cut each tomato in 6 pieces, place in saucepan and cook until done.

    Mash up.

    Break up your bread in small pieces and add to tomatoes.

    Stir (should be pudding consistency; add a little tomato juice if necessary).

    Add butter, sugar, salt and pepper. Top with fresh dried parsley.
