Tomato Pudding

  • 1 qt. canned tomatoes with plenty of juice
  • 6 slices toast, cut into cubes
  • 1 c. sugar
  • 3 Tbsp. butter
  • vanilla flavoring

Directions

    Use baking dish or pudding pan.

    Line bottom of dish with a layer of toast cubes, then a layer of tomatoes.

    Sprinkle with sugar and dot with butter.

    Alternate layers until all is used. Add four drops of vanilla on top.

    Bake at 350° about 45 minutes.
