- 2 tablespoons butter
- 1 tablespoon all-purpose flour
- 3/4 cup milk
- 1/8 teaspoon baking soda
- 3/4 cup canned diced tomatoes
- 1/4 teaspoon prepared yellow mustard
- 2 eggs
- 1 cup shredded Cheddar cheese
- salt and pepper to taste
Directions

1Melt the butter in a heavy saucepan over medium heat.

2Stir in flour until smooth, then continue to cook and stir until lightly browned, about 10 minutes.

3Gradually stir in the milk so that no lumps form and then simmer until thick, stirring the whole time.

6Whisk together the mustard and eggs; stir into the tomato sauce.

7Set the saucepan over a pot of barely simmering water (like a double boiler).
