- 1 small onion, chopped
- 1/4 tsp. minced garlic
- 2 Tbsp. olive oil
- 1 (13 3/4 oz.) can chicken broth
- 1 medium tomato, diced
- 1 tsp. dried basil
- 1 1/2 c. dry Minute rice
- 5 pitted ripe black olives, sliced
Directions

1Saute onion and garlic in oil until soft.

2Add chicken broth, tomato and basil.

3Bring to a boil.

4Stir in rice and olives. Cover.

5Remove from heat and let stand for 5 minutes.

6Fluff with a fork.
