- 1 c. rice
- 4 tomatoes, peeled and diced
- salt and pepper
- 1 tsp. dry mustard
- 1 c. grated Parmesan cheese
Directions

1Cook rice in boiling salted water for 14 minutes.

2Drain. While rice is cooking, stew tomatoes gently for about 10 minutes. Add a little water if necessary.

3Press through a sieve.

4Return to low heat and add seasoning.

5Mix well.

6Stir into the hot rice and sprinkle with cheese.
