Tomato Sauce

Ingredients

  • 1 tbsp. unsalted butter
  • 1/4 c. olive oil
  • 2 shallots or 1 large onion
  • 1 sprig thyme
  • 1 small bay leaf
  • 3 clove garlic
  • 2 1/4 lb. overripe vine plum tomatoes, preferably San Marzano
  • 2 tbsp. tomato paste
  • 1 tbsp. sugar
  • 13 c. tomato juice
  • salt
  • Freshly cracked black pepper

Directions

    Put the butter and oil in a pan and add the shallots, thyme, bay leaf, and garlic.

    Sweat over a low heat until the shallots are softened and translucent.

    Add the tomatoes, paste, sugar, and tomato juice, if using.

    Bring to a boil, then reduce the heat and simmer, uncovered, for 20-25 minutes.

    Use a ladle to press the sauce through a fine mesh strainer.

    Season to taste.

    Variation: Roasted Tomato Sauce.

    Use only fresh tomatoes for this.

    Cut the tomatoes in half, rub each with a little of the garlic, and place on a baking tray.

    Drizzle the olive oil over them and then sprinkle the thyme leaves on top.

    Season lightly with salt and pepper and roast in a preheated 250 degree F oven for 40 minutes, until the tomatoes are very soft.

    Add the roasted tomatoes to the recipe as in step 2 of the basic recipe and proceed as described there.
