  • 1/2 tablespoon olive oil
  • 1/2 cup onion chopped
  • 1/4 cup mushrooms canned
  • 100 grams ham diced
  • 1 clove garlic chopped
  • 1/2 teaspoon paprika
  • 15 1/2 ounces chickpeas canned, drained
  • 1 cup water
  • 1 tablespoon chicken bouillon powdered
  • 3 tomatoes ripe, chopped
  • panela cheese diced, or basket cheese

Directions

    In a large saucepan, heat the olive oil and saute the onion, mushrooms, ham, garlic, and paprika. Once the onion is transparent, add the chickpeas, water, powdered bouillon, and tomatoes.

    Cover the saucepan and boil for 15 minutes. Turn the heat off and let the soup cool for a few minutes. Puree until smooth using a hand mixer or in the blender.

    Garnish with the panela cheese and serve.
