Ingredients

  • 8 fresh tomatoes, chopped or 4 c. canned tomatoes, chopped
  • 1 c. chopped celery
  • 1 onion, chopped (medium-large)
  • 1 tsp. garlic salt
  • 1/2 tsp. pepper
  • 1 tsp. basil
  • 1 Tbsp. chopped parsley
  • more of seasonings to suit taste (optional)
  • 1 (8 oz.) pkg. cream cheese (optional)

Directions

    Cook tomatoes, celery and onion in 1 cup water until celery is tender.

    Add all seasonings and cream cheese.

    Puree in blender until creamy texture and return to low heat, not allowing to come to boil.
