  • 2 tilapia filets,
  • 1 ripe tomato-diced,
  • 1 tbsp shallot-finelly chopped,
  • juice of 1/2 lemon,
  • 1/4 cup dry white wine,
  • sea salt and pepper,
  • basil-finely ripped,
  • rosemary-finely chopped,
  • 1 1/2 tbsp dijon mustard,
  • 2 garlic cloves-crushed,
  • 1 tblsp finely chopped red onion.

    Preheat oven 375C.

    Put filets in oven proof dish.

    Combine lemon juice and dijon, wisk.

    Season fish with salt and pepper.

    Pour lemon-dijon over fish.

    Pour white wine over fish.

    Sprinkle remaining ingerdients over fish.

    Bake for 25 minutes, covered in foil, take foil off for last 5 minutes.
