  • 4 firm fresh tomatoes, diced in large chunks
  • 3 medium zucchini, medium chunks
  • 10 to 12 fresh mushrooms, halved
  • 1 Walla Walla sweet onion
  • McKay's chicken seasoning
  • 1/4 c. margarine
  • hot rice

Directions

    Put the onion and margarine in a microwavable bowl, cover and cook until almost soft.

    Add zucchini and mushrooms and continue cooking to the stage you prefer.

    Sprinkle with McKay's to taste. Stir in the tomatoes and allow the vegetables to heat through. Serve over rice.
