  • 1/4 C. olive oil
  • 2 garlic cloves, minced
  • 2 C. onion, sliced
  • 6 to 8 large ripe tomatoes, sliced
  • 1/2 C. fresh parsley, chopped
  • 1/4 C. fresh basil leaves, chopped
  • 2 Tbsp. snipped chives
  • 3/4 C. herb stuffing
  • Salt & fresh ground black pepper

Directions

    Heat 2 Tbsp. olive oil.

    Add garlic & onion.

    Cook about 5 minutes.

    Spread this mixture evenly in a 9 x 13 inch glass baking dish.

    Top with sliced tomatoes.

    Mix remaining ingredients and sprinkle on top.

    Drizzle with 2 Tbsp. olive oil.
