Tortelloni Boscaiola

Ingredients

  • 1 tbsp vegetable or olive oil
  • 3 strips bacon, chopped
  • 3.5 oz button mushrooms, quartered
  • 1 clove garlic, thinly sliced
  • 1 1/4 cups heavy cream
  • 14 oz four-cheese tortelloni
  • 2 tbsp pecorino romano cheese, grated
  • 2 tbsp flat-leaf parsley, chopped

Directions

    Heat oil in a large frying pan over moderate heat. Add bacon, mushrooms and garlic and cook, stirring, for 4 mins or until mushrooms have softened. Add cream and simmer for 8 mins, or until sauce thickens slightly.

    Meanwhile, cook pasta according to package instructions. Drain.

    Add pasta, cheese and parsley to cream mixture and stir to combine. Serve.
