Tri Color Bean Soup

  • Tricolor beans with sweet Italian sausage
  • Serves 5
  • 1/3 c. olive oil
  • 2 cloves garlic, crushed
  • 1 onion, diced
  • 2 stalks celery, sliced
  • 1 cup sweet Italian sausage, sliced
  • 14 oz. white beans, preferably cannelini, drained
  • 15 oz. can chick peas, drained
  • 15 oz. can red kidney beans, drained
  • 4 c. chicken stock
  • 2 bay leaf
  • 1/3 c. fresh grated Parmesan
  • 3 tbs. parsley, chopped

Directions

    Brown onion, garlic, celery and sausage until mixture become golden brown. Add beans, bay leaf and chicken stock and cook together for 20 minutes. Discard bay leaf. Add parmesan and cheese and parsley and serve.
