    Preheat oven to 450°.

    Place roast, fat side up, on rack in shallow pan.

    Season to taste.

    Cook for 25-30 minutes.

    Then reduce heat to 350° and cook for an additional 25 - 30 minutes. Remove from heat and let meat rest 5 - 10 minutes before carving. Roast will be medium to medium rare.

    Slice across grain.
