Tripe Soup

  • 2 1/4 pounds tripe beef
  • cold water
  • 1 head garlic whole
  • 1 blood sausage
  • 1 chorizo sausage
  • 2/3 cup ham Iberian, you can substitute pancetta
  • 1 onion chopped
  • 1 tablespoon flour
  • 1/2 tablespoon paprika

    Wash the tripe well with very cold water, at least 3 times.

    In a soup pot, add cold water, the whole garlic head, blood sausage, chorizo sausage, ham, onion, and tripe and boil for 3 1/2 hours.

    When everything has softened, add the flour and paprika and boil another 15 minutes.
