- 4 ounces neufchatel cheese, softened
- 10 ounces frozen chopped spinach, thawed and well drained
- 14 teaspoon hot pepper sauce
- 14 cup chopped roasted red pepper
- 8 ounces cheddar cheese, cut into 60 thin slices
Directions

1Beat neufchatel, spinach, and hot pepper sauce together until well blended.

2Stir in red peppers.

3Divide spinach mixture among crackers and top each with a slice of cheddar cheese.

4Microwave on HIGH for 15 seconds (or until cheese begins to melt), 6 crackers at a time.
